How do I paint indoor metal door?

I am in the process of stripping the inside of my garage (into kitchen) door. It is metal, and has about 6 layers of paint that are coming off. I don't want to go through this again, so I need some pointers. First, can I use a latex paint? If so, semi-glossy, or high gloss? It previously had eggshell on it, and attracted SO much grime. I would prefer not to use oil-based paint unless absolutely necessary, as fumes can trigger seizures.
